This blend of 100% Sauvignon Blanc offers you a memorable moment of conviviality. Pale silver-gold in color, with the scent of the forest filled with spring leaf, as the swelling light begins to warm the shaded soils. Every flavor note in the palate is gathered together to an arrowhead of singing green acidity, limpid, translucent and crystalline: Pouilly-Fumé of grace and conviction. Perfect match with a white fish served in a light sauce.

Sauvignon Blanc 100%

Terroir

Made from selected parcels of old-vine grapes, their better exposure to sunlight gives this wine greater concentration and complexity. Soils are of shell-rich flinty clay.

Production

The grapes were gravity fed into the progressive pneumatic press. There was static must settling, skin maceration and thermo-regulated fermentation in stainless steel for 3 weeks to preserve aromatics and fruit expression. Selected tanks were kept on their fine lees after blending.
